The know-how

Like all the great houses, Domaine Cordier gives the production of its wines all the attention and know-how required: very short pruning, severe disbudding, manual leaf thinning, respect and maintenance of soil life, hand picking terroir by terroir illustrate the level of requirement practiced on the estate.

In winemaking, in the same way, the exclusive use of indigenous yeasts and aging on original lees show how much Christophe Cordier wants to preserve the material and identity of his wines. High-precision work adapted to each plot, each grape, each wine!

Bottling is done gently and by gravity, without fining and with very light filtration.

Biodynamics 
as a roadmap

Since 2018, Christophe Cordier has been applying the principles of organic and biodynamic viticulture to the vine that he learned from Vincent MASSON. Lunar calendar, energized preparations and natural substances are implemented with relevance to provide the necessary stimulation and care to the plant. In conversion since 2021, the wines are certified AB and DEMETER since the 2024 harvest.

Making soils alive

In order to improve soil life so that the vines can draw the best from it, earthing up and raking work is carried out by animal traction on a large part of the plot. Also, biodynamic treatments and preparations are applied on foot. Tractor interventions are limited as much as possible to avoid compaction and erosion.

Vine weaving

A great deal of attention is paid to the manual work of the vine. For several years, Christophe Cordier has chosen to weave the vegetation in order to preserve the apex, improving the receptiveness of the vine to its environment and the balance of its grapes.

The leaf surface is thus more substantial, its establishment on a raised trellis draws beautiful plant arches in high season offering shade from one row to the other. An agronomic adaptation that makes the estate more resilient to climate change.

The philosophy of the estate

The Estate works around a hundred plots, scattered across the hillsides of the Mâconnais. A mosaic of vines, a mosaic of terroirs, a real wealth for Christophe Cordier who enjoys working this diversity. The winemaker thus likes to exploit different soils (primary, secondary and tertiary), on reduced surfaces. As if each plot were a challenge. “A difficulty in terms of logistics” he acknowledges but a real strategic choice for the estate which aspires to create the greatest vintages of the Mâconnais.

Great Appellations

Christophe Cordier produces wines under the greatest appellations with Chardonnay as the only grape variety: Pouilly-Fuissé Premier Cru, Pouilly-Fuissé, Saint-Véran, Viré-Clessé, Pouilly-Loché, Mâcon-Milly Lamartine, Mâcon-Loché, Mâcon-Fuissé, Mâcon-Vergisson, Mâcon, white Burgundy...
