Vinification using only indigenous yeasts and ageing on the original gross lees also go to illustrate Christophe Cordier's desire to preserve the grapes and the unique identity and purity of his wines, the result of painstaking work tailored to each vine, each grape, and each wine!
Gentle bottling is carried out using gravity, without fining, the wine only undergoing a very light filtration.
